Bitcoin transactions are known by everyone. That's the point of the ledger. The problem with tracking comes from when people find what wallet is paying which wallet. To buy/sell/trade bitcoins for cash nowadays, you have to give some sort of identification (unless you buy directly from the seller). There are services which offer more anonymity but it always comes at a cost. Depending on what you want to buy or sell, it's sometimes cheaper just to use a different coin.

Yes of course, anything on the blockchain is traceable. But there are definitely ways to buy anonymously

I can answer this question in the following way. Bitcoin transactions are not traceable in principle, but I think anything is possible in our world. You have to be more specific about your situation, because every situation has its own nuances. Maybe what you meant when you asked the question, "How can I hide my bitcoins from the police?" There are types of crypto-mixers that hide transactions. I know some of them, but as far as I know they are actively used in Russia. Dark transactions are at a high level in this country.
