Bitcoin transactions are known by everyone. That's the point of the ledger. The problem with tracking comes from when people find what wallet is paying which wallet. To buy/sell/trade bitcoins for cash nowadays, you have to give some sort of identification (unless you buy directly from the seller). I can answer this question in the following way. Bitcoin transactions are not traceable in principle, but I think anything is possible in our world. You have to be more specific about your situation, because every situation has its own nuances. Maybe what you meant when you asked the question, "How can I hide my bitcoins from the police?"
