CE is just the making of software. You learn at a basic level how computers work because you need to, but to a CE if it works it's good enough.

I would go for Computer Engineering since it's about creating software, in these days, having the ability to do that is quite important and practicle, also it's a well looked for job, there's even a shortage of them in my own country.
Also if you can do some nice software you can also extend it into your own business or hobby. The possibilities seem quite endless.

I think that's CS. Also CS is also high on demand in the U.S. and only a few of them are taking those courses.

Yea, you're probally right. I'm kinda suprised that there's a shortage of them even though technology is pretty popular for the youths these days and they earn quite well.
Even my own father tries to set me up as one...
It's quite annoying at times :/

There's a high need for both fields, as a lot of people can't or won't understand the maths needed to be an educated CS/CE. It's not easy, by any means, to graduate with either of those degrees if you're not highly motivated.

Just from my experiences.
CS is a good field, don't get me wrong. But be aware you might end up being a code monkey. Coding is a universal skill and easily outsourced, so expect a LOT of competition and hours. You might need to prove to your company that your skills are superior and needed rather than paying a foreigner less to do the same job. Not to mention, CS is becoming a big field, and kids are starting to become decent coders before they've hit puberty, It's insane. If you're going the coding route, be ready to put in some major work to get ahead of the crowd.
As for CE, you'll probably encounter a more difficult workload depending on your talents. Computer hardware engineering isn't a bad field, and you could end up working in a variety of places and can get the opportunity to work on some neat projects (Building high-end robotics and prototypes). Expect advanced physics courses and circuitry/electricity...etc. It's tough shit, but it's hands-on and enjoyable. You will probably still know some coding, but not as advanced as other majors.
If you went down the Software Engineering, you'd definitely be an advanced coder. But like I said, depending on the job you're doing, you might end up in the same difficult position of being an expendable coder with average skills. I know a guy who went through software engineering, and he makes 6 figures and highly recommended this field. Although, the "engineering" term is used loosely. Some schools/companies won't recognize that term and you'll be no different than a CS coder. Just a heads up.
Personally, I don't have time for a hands-on major such as engineering. I was really set on doing computer engineering at one point.

What you need to do if you're looking to be highly employable as a SE/CS is to be able to show/prove that you are more than just a programmer - you understand how computers work at a fairly basic level, and therefore can make software as efficient as possible, and that you are aware of the limitations, and therefore the possibilities, of specific languages.

Computer Engineering would be something I would do, even though I'm in love with the Army and graphics I would do this as a back up plan
