Im new so please forgive me but what is the difference between Kali and Ubuntu or etc. What makes it easier and what makes it harder?

They are different Linux distributions. Ubuntu is designed to be beginners friendly(I started with Ubuntu)
And Kali is designed for hacking, exclusively.

Im new so please forgive me but what is the difference between Kali and Ubuntu or etc. What makes it easier and what makes it harder?

Kali Linux is harder. Use Ubuntu or Linux mint first.
My IT skills that I know perfect is SQL, HTML ,css ,wordpress, PHP.
coding skills that I know is Java, JavaScript and C#

To be honest, I found It extremely simple to navigate my away around and get accustomed to It.

I'd say more the fact that I adapt to changes very easily, and have the ability to absorb Information with minimal effort.

Can't agree more. Linux distributions are different in every way possible. And Kali is quite distinct.

Agreeing with what some other people said, I'd go for Ubuntu or Linux Mint. When I started with Linux I used Fedora. I believe it's a more research orientated flavor but it worked well for me.
