Im new so please forgive me but what is the difference between Kali and Ubuntu or etc. What makes it easier and what makes it harder?
Kali Linux is harder. Use Ubuntu or Linux mint first.
My IT skills that I know perfect is SQL, HTML ,css ,wordpress, PHP.
coding skills that I know is Java, JavaScript and C#

To be honest, I found It extremely simple to navigate my away around and get accustomed to It.
true but I know you have a good foundation in your Linux skills. Plus you have a lot of experience as well. that is why Kali Linux is easy for you.

Agreeing with what some other people said, I'd go for Ubuntu or Linux Mint. When I started with Linux I used Fedora. I believe it's a more research orientated flavor but it worked well for me.
