I somewhat like my eye color (brown-ish) but if I had the option to change it, I'd chose ice blue or something appealing like that.

Nope, I have a somewhat rare eye color, I'm not sure of the rarity but most people think it's cool.

I have this sort of eye color, except the ring around the pupil is darker, It also changes thinkness, it's usually the thickest in the mornings and less thicker as time goes on (probably because my pupils are really sensitive to light)

There has been for quite some time now, They are normally done for people with problems with the actual eye and pigmentation issues but you can get it done for cosmetic reasons.
