In my last relationship I dated an atheist, while I'm open to the concept of religion, but currently I'm not convinced by it.

Yeah, all opinions are welcome.

But what interests me more are the opinions of devout theists and true atheists. Seeing as how on the internet, they don't mesh very well and I'm curious if they'd compromise in real life for someone.

I would date for a while maybe, but I couldn't marry her. I don't see how you could spend your life with someone with opposite fundamental beliefs.
