There are over 500+ Eps.... Where do I start watching?

Obviously at ep 1. Well, that's where I usually start every anime so I can watch the characters and plot grow and stuff.

Suck it up and marathon that whole series in 4 days. WOOHOO. But yea, I'm not sure if I can sit still watching that many episodes at a time. My attention span is only so much :L

Well generally, as with all series that moves in chronological order, you should start on episode one.

One piece is a great anime, start from episode 1.
Each episode is 20 mins but the time will go fast because it's awesome & funny.
