I'd be hesitant to make that claim. No, police cannot directly track you through Bitcoin, however police very well can trace Bitcoin back pretty well through the blockchain regardless of how "clean" it is. That's the reason so many people have moved over to Monero for high anonymity transactions. Bitcoin is, none the less, far more anonymous than PayPal or CC

ETH is what Bitcoin should have been from the beginning, however, as a cryptocurrency it's one step ahead in terms of anonymity. When using Bitcoin, the address of the sender becomes associated with the transaction which makes it easy it associate different addresses together and track the transaction throughout the network (you still don't know who controls that BTC address). What ETH does different here is that the transaction becomes like a transition back in time. For instance, if you got 2 ETH and I send you 1 ETH, the result would be 3ETH altogether. Here's the catch though, when you decide pay me back my 1 ETH, there's no way you can know if it came from the 3ETH or 1 ETH, everything is apart of your overall balance which was 3 ETH.

However, it seems that you're out for the best anonymity when using cryptos. I'd say that Monero is the crypto you're looking for, it works differently compared to Bitcoin and it's far more developed than ETH at the moment.

Bitcoins can be very easily tracked using blockchain explorer websites (like btc.com and blockchain.com), theres also sites that can identify wallets and link them to hot wallet services (like Coinbase and Uphold), The same is true for Ethereum.
If you want a privacy coin, you can either choose XMR or ZCASH, as both of them have options to send completely anonymously, also the TRON team has announced they will support anonymous transactions in the near future. Once TRON anonymous
transactions are supported, It'll be my first choice as TRX has the lowest fees and fastest transaction speed of the ones above, and is also high in popularity, volume, market cap etc.

Btc is easily trackeable using btc.com or blockchain.com
Obviously it's not that easy to link a random wallet to an especific person, but if they do, they know all your transactions.
