I do eat rice at times, but I do not plan on eating it every single day.

What mum makes isn't going to be enough. Here's an example of what I'd want to be eating during a bulking phase.

Meal 1:
- 6 Eggs
- 4 Pieces of bread with butter
- Large bowl of cereal

Meal 2:
- 4 Chicken sandwiches
- WPI protein shake
- 100g Almonds/assorted nuts

Meal 3:
- 2kg pasta w/ sauce

Meal 5:
- 4 Peanut butter rolls
- Bowl of yoghurt and banana

Meal 6:
- 4 Eggs
- 300g steak
- Mashed potatoes
- 200g broccoli

If you can eat similar amounts of food every day, you'll be eating enough.

That's the sort of caloric intake you should be shooting for. You don't need to have those foods specifically but I'm really trying to give you an understanding of the volume of food.
