Yeah, you can install 2 AVs in 1 VM and  3 VMs = 6 AVs to test crypter or something.

I only have AVs Installed on selected VMs. When I wish to solely test a tool, the AV's false positive detection Interferes.

Although you can take a snapshot at the time of creating a VM (which can fail to restore), It's also good practice to backup the VHD. In the event of Infection, simply dismount the Infected VHD and mount the backup. The entire process takes less than a minute.
