You don't get a degree in those fields, you get a degree in computer science, with a concentration on something specific( firewalls, exploits, etc )

Some universities offer electives for things like information assurance, etc... You can pick which electives you want and go from there. There are a fair amount that offer security related courses, although the value of those courses is sometimes debatable.
