[Nyx]

Nice list. Just started Cowboy Bepop not long ago as I've heard lots of great things, @Oni is a big fan I believe. I'm horrible with naming my favorites of anything as my list constantly changes and I forget what I watch, but in no particular order: Mob Psycho, Jujutsu Kaisen, Demon Slayer, Cyberpunk ER, Steins Gate, Vinland Saga, Death Note, Dr. Stone, Naruto and Shipudden. I'd like to say Cyberpunk is my overall favorite, but it's hard to say considering how many times I've watched Naruto fight scenes again. Some ongoing shows that I'm really enjoying as well: Spy x Family, Bleach 2.0 and Chainsaw Man, are all really awesome and will probably find a spot on the list.

Bunch of others to mention that I enjoyed a lot, and I'm sure I'm totally forgetting a couple shows that would boot others off this list as it suffers from some recency bias.
