Let me start off saying this: I am not in any way as good as you are in these fields. These are just my suggestions.

1. I think Ubuntu server is alright, but personally I would go with Debian.
2. Set everything up so that it easy to access, and where heat won't spread to the other devices.
3. I'm pretty sure that they can all run on the same server, although I might suggest putting them on different one's for ease of access, and management.

I really hope I could help in some way! If you wouldn't mind PM'ing me along the process with pictures of your builds and stuff. I would love to take a look! Hope you pass!

everything is installed in the rack + Ubuntu Server is running on server 2.
Next step is setting up the storage to work with the server under ubuntu, anyone have any tips/guides/ideas?

Ask yourself this... What type of files are going to be stored on the server? Who will be able to access these files? What kind of permissions will they have ? What type of RAID should I use? Is a disk quota necessary? Do i need partitions if so how many? what type of disk volume is suitable?

Those are a few questions you should answer yourself bro and honestly if i were you the way it seems right now is that you need a Windows Server instead of a Ubuntu server. Dont make it difficult for yourself.
