I use VeraCrypt on a daily basis- predominantly on my USB flash drives and external HDDs.
For added protection, create an encrypted volume and then encrypt the device (containing the volume) with BitLocker Drive encryption. Essentially, there's two forms of encryption authentication to access the data stored. The Windows edition must support BitLocker, though. Of course, any other form of encryption will suffice.

I'd rather have an overkill, than risk exposure of my sensitive data.

As opposed to fingerprint scanning, whereby law enforcement agencies can obtain a warrant and force you to unlock a given device, they cannot force you to remember a password.
Bottom line- do not use fingerprint authentication for sensitive/critical data, always use an entity stored In the human brain.

However, they cannot force you to "remember" a password.
You cannot give what you don't have. In this case, failure to provide a password due to loss of memory.

I tend to very much enjoy VeraCrypt. As for the Key Disclosure Laws, it is a serious risk when in Europe, however in the United States, it has for the most part been proven that forced key disclosure violates the fifth amendment right against accidental self-incrimination. However fingerprints would likely still not be protected under the fifth amendment so fingerprints should never be the only end encryption unlock method.

I've used VeraCrypt in the past, but not for my whole HDD. I don't really see the use in encrypting your whole drive unless you're on the run from the FBI. Maybe on your USB if it gets stolen, but other than that, there's no use in my opinion.
