As almost anybody could guess, my favorite would be Cowboy Bebop's. It has one of the best openings.
"Tank!" is currently my ringtone as well.

I heard KissxSis is pretty good, actually. I'm not sure what to say about half of the video though...

Other honorable mentions would go to Gatchaman Crowds (Didn't really watch it yet, but its OP is catchy as hell, and lyrics are in engrish, which is a bonus)
and Steins;Gate, which the show is best thing ever, period.
