Hmm i would say AoT and One Punch Man, just because i like the music.
But the one that i liked the most as a kid was the first One Piece Opening with Gold Roger.

I would say Drazon Ball Z, the theme song itself was awesome.

One-Piece has the greatest opening it shows the entire story about luffy trying to become the Pirate King and reach One-Piece and yet interesting enough to go strong even after 950+ episodes.

Baruto has a cool opening, they way they foretell the story and go back to narate the past is awesome. They have also built lot of anticipation.
