Haven't had frozen in a while but I vaguely remember that it was something like -20C/-4F for a day according to the FDA to prepare it? Tried doing it myself years ago anyways with some snapper I got, nothing really hard, and it was good stuff. If you ever want to mess with it being proper then bluefun and yellowfin tuna alongside farmed salmon is (at least FDA-wise) allowed in restaurants to be done up fresh and it does taste a bit nicer as an exception to the "frozen for parasite destruction" guarantee that they enforce.
