I see In your video you're still running Windows 7.  Wise move. In my views, It's the most stable version.

Yes, Windows 10 removed the Windows update feature from Control Panel with the Intention of forcing It's users to update.

I've disabled the Windows Update service and set my connection to "Metered". No updates experienced thus far.

I may update to Windows 10 when I have time, there are many files I need to transfer first

I do hope you have backups on external HDDs.

Apart from the updates and It's privacy Issues, I don't mind Windows 10.
