It's not that I don't want to, it's that my schedule is too unpredictable to commit myself to coming to classes at specific times.

Some weeks ago a member posted something about duolingo. I have no idea wether Japanese is available though, but you could check it out.

On top of using memrise i got an app called "Human Japanese". it cost $11 i think, on android (not sure if it's on ios or not), and i found it really usefull, it does a good job at explaining why everything is. I'd recommend it if you wanna learn.

I think anime might be a good way to learn japanese only if you already have a semi-established background.
Like, if you just start watching anime, even if you play close attention to the language unless you are some kind of genius it would be extremely difficult to pick up the language since watching Anime is largely a passive activity. Plus you don't want to end up speaking like anime characters. You'd be a joke if you ever spoke to a native.
I'm bilingual in English/Polish with Polish being my second-language. It took 8+ years of actively studying the language from a young age to really become fluent in it (it's one of the most difficult languages for an English native to learn) but it took alot of talking with natives (parents, friends of parents, students studying the language), and reading books in Polish. IMO, reading is the Number 1 way to become fluent in a langauge and expand you're vocab (if you can't immerse yourself in the culture). Once you get to the point of being able to read, you can read everyday for XXX time and slowly climb your way to different levels of proficiency.
Why reading? well, it's an active activity and in order to understand the book you gotta look up words, understand words in context, sentences in context, grammar in context, etc.
Now i don't think being bilingual really qualifies me to be some kind of guru in how to study a language, but this is just my two cents, take it how you will:
If you want to learn japanese, establish some kind of base in the language first. Use Duolingo once they release their Japanese version, pirate a copy of the Rosetta stone, buy books from Amazon, use sketchy weeb E-Books from the internet, whatever. Just establish a base so that you can undestand simple sentences and grammatical structure. Get grammar and the language into your brain, know it. There's really no "easy" way to learn a language, especially one like Japanese. Unless you are already proficient in 4+ languages, and have your brain wired in such a way you can pickup languages with ease, it's going to take alot of work. So expect it. Practice everyday if you can. Devote some part of your schedule to just learning japanese doesn't matter how you feel that day, JUST DO IT (shia labeouf).
Once you establish that base, sure, anime can help. listening to Japanese radio, and podcasts can help, too. Maybe find a Japanese podcast that is focused on helping you learn the language. But those won't make you fluent or even have a working knowledge of the language. The Jap. Podcast. learning thing might help you most out of those options, tbh. Either way, you have to continue cementing grammatical concepts.
Also iirc Japanese has like three different alphabets, you're obviously going to want to work your way to the one that's most commonly used and professionally expected.
Once you feel comfortable with grammar/reading get a Japanese book, or make it a few books. Probably going to want to start with Childrens books or whatever reading level you are at and work your way up. Continue cementing grammatical concepts, too,because if you don't you're going to forget them and reading even childrens books will be wonky.
Eventually you might want to get a Japanese Pen Pal https://www.mylanguageexchange.com/pen-pals/Country/Japan.asp
Communicating with a native speaker is also one of the best ways to learn a langauge, might even want a few depending on how often they send mail. Might want to setup some video chats, too. Hell, join a Japanese language forum or something and say you're an English speaker trying to improve your skill. I'm sure they'd be welcoming.
I'm sure there are a ton of online resources for learning Japanese, too. Maybe their not all-inclusive like Duolingo or Rosetta stone, but think about what those apps give you. The individual parts of that app are definitely on the internet in one form or another.
If you do all this, which is certainly possible in your time frame of a few years, I guarantee you will be at least at a proficiency where you can talk with a natvie and they will be able to understand you. BUT it's going to take work, and you're going to have to be disciplined in your studies. If you're not, it just won't happen.

A word on motivation:
Motivation isn't a real thing. It doesn't happen, it doesn't work, and it will never. Inspiration is a thing, motivation isn't. Don't wait until you're "motivated" to do something, because you just won't be. You're body will much rather smoke weed on the couch and play COD for 7 hours then learn Japanese.
Instead of trying to "Get Motivated" become disciplined. Learn discipline, and you will reap the benefits millions more than if you wait to be motivated

That was the best post on this thread that I've read so far. Motivational (or whatever else that feeling was) too, thanks. I'll try to learn to read in japanese (kanji is a bitch). I already know another language (and a half for school) so that should help me learn new ones (get my mind used to learning languages)
