That's essentially what Star Wars Visions is. It's Star Wars anime. It's not technically Cannon, which I'd argue is more a of good thing, since they can explore characters and story lines that may not have fit with Cannon.

Lucasfilm's Kathleen Kennedy has anointed 10 series. Based on the characters and events of the STAR WARS movie universe. This is the franchise's biggest expansion since it came into the Disney family. The first of three new feature films has been announced for 2022. But that's not news to anyone anymore. But this number of TV series really surprised everyone. In addition to Star Wars, they have quite a few new series coming out. I can't wait to watch them on [link redacted] and be amazed. I'm shocked to be honest. Mastabb projects they have.
