In no country is it illegal to take logs. It is, in fact, required within the EU, though some member countries decline to mandate it. For the company, though, logging makes sense, because if you get bit with obstruction your company is sunk.

But let's say that I use your VPN based on your server and hack bank the bank call to feds, feds come to you you say "I don't have log files" they say this happen to you server you will pay we don't care. Do you get it now ?

You do if that knife manufacturer made a knife that would automatically incinerate itself upon insertion into a human.
You also underestimate the extreme annoyance it can be to not be friendly with law enforcement. Much easier to just log stuff, it's at marginal cost to you, prevents lawsuits, and keeps LEAs on your side.

Thanks for the tutorial. Some of the tips are pretty much common sense though.
