Samy Kamkar created RollJam which is a tiny handheld device which does exactly that, intercepts the rolling code and replays it back at a later date, I want to build one but I'm yet to come across the blueprints for the device, I managed to figure out the parts needed

Put it all together add the code and you've got yourself a RollJam now I just need the code & the schematics to put it all together.
