These seem to be the two most recommended operating systems that I can find in regards to security and anything hacking oriented. For those of you that use one of these, or are familiar with these operating systems, what are some pros and cons to them?

Greatly depends on what exactly u want to do. Like Kali is all about offensive approach, it has great collection of tools for nearly all types of hacking. On the other side Qubes OS focuses on users security. It assures security by isolating the os and one can create virtual environment within. I personally have not used Qubes but does know that it is greatly used by Malware analyst as it helps in creating virtual environments.

qubes for compartmentalization and defense against malware. kali linux should never be used as a main distro, mostly as a VM

The real question is whether you're more interested in pentesting or your own privacy/security. Kali is based on Debian and used mainly for penetration testing. Qubes is more compartmentalized, with a focus on virtualization and security. I wouldn't recommend using Kali as your day-to-day OS, but you should give Debian a look if it piques your interest.
