Gonna have to second the Witcher. Great show, lots of these netflix originals are turning out to be really good.
Another one, not an anime, is The Mandalorian, just finished binge watching it, and all the scenery is 10x better after a joint.

I'd like to rewatch Devilman Crybaby while stoned or even tripping, the visuals there are pretty crazy and the story moves pretty fast which could be hella intense.
