Building's the main thing I enjoy whilst playing this game - I agree with it's not fun anymore doing the same 'old but set yourself some rules or goals, like catch 100 fish - cook 100 fish.
It drags the game on and makes you look forward to playing it.

Well, have you tried mods that give the game a different aspect?
I suggest Tekkit or Feed the Beast. Both these mod compilations feature some really excellent mods that change many of the game mechanics significantly and i assure you, you will have a lot of fun figuring it out once you get going.
Another thing you could try is role-play servers. These are always fun and you can normally make a few friends along the way.

It does get boring after awhile, when you are playing by yourself, that is.

You could try playing on different servers, but that's about it. I never got into Minecraft myself, although I tried it several times.

We have the server set up, but it is currently closed while I add anticheat, etc...

I would advise installing the divine rpg mod, It adds 10 times more content into the game.

It's not the best game I played but it's pretty much enjoyable especially if you're bored and/or with friends
