As an avid viewer of game reviews and the like, I can say you're on the right path, doing the right thing, the right way except for one thing: As you go further down, pick bigger things than Flappy Birds. At least that's what I enjoy, you never know what others might like.
That's not to say there's no room for improvement, but still, you did good.

Not so much as popular as it is something more large scale, again this is my personal preference. It's good to start on smaller games.
Essentially:
Small Game = Flappy Birds, Angry Birds, anything like that.
Big Games = Bastion, Silent Hill, etc.

Basically measured in length of the game. I feel like it'd be easier to gain experience in doing those kinds of things with that.

That's completely up to the subscribers perspective.
A little more experience could never hurt, but you could also just keep putting videos as you get better.
People seem to be attracted to those who have lots of videos, god knows why but eh.
