I just found this awesome Tweak/Tool yesturday, on my iOS Device.
iKeyMoonitor, is the program called, it is located in the BigBoss repo, so everyone with the standard repo's can get this easily!
About:
iKeyMonitor is an iOS Keylogger for iPad, iPhone, iPodTouch and any other iOS devices that logs keystrokes(available soon), websites, screenshots and automatically sends the logs to you by email or FTP. iKeyMonitor aims to monitor and track the user activities taken place on target Apple devices.
The main logging features of iKeyMonitor include tracking websites, printing screen and recording keystrokes (developing).

-Capture screenshots in any interval

How to Download and use:
1. Open up Cydia
2. Search for iKeyMonitor
3. Install the tweak and Respring
4. Now open up Safari and type http://8888 or :8888 or localhost:8888 to access the Keylogger.

PS: Mind you that installing this isn't silent, unless you install it and jailbreak the device secretly, will then you have a good way to hide the keylogger.
