16 is the sweet spot. If you have the money to spare then 32 will not disappoint you.

32GB isn't "too" expensive atm (unless you're buying a laptop). But as you say, 16GB will more than see you through some solid games/programs. At least the prices on RAM aren't being hiked up like GPUs (thanks crypto xD).
