FTP Map
"Ftpmap scans remote FTP servers to identify what software and what versions they are running. It uses program-specific fingerprints to discover the name of the software even when banners have been changed or removed, or when some features have been disabled. IPv6 is fully supported."
Looks pretty cool to circumvent FTP version spoofing. Anyhow have fun.

banner grabbing the service with telnet or netcat ?

Even when a program has a fake banner or it replaces its banner it will try and match the ftp daemon based on grabbing other data and then using that to match it to a predefined list.
