Is AI really detectable UK unis? I've submitted a couple assignments that i used chatgpt but just used paraphraser as well and havent got caught, is it likely i will get caught?

You're in university for university, not a degree! Please actually get to learn stuff because having knowledge will only benefit you and you're expected to learn anyways.

there are no reliable AI detectors, both real world experience and comments from openai show this. there's a lot of open bounties for people to be able to create a reliable detection model. that said there are some universities that are trying to use ai detectors as part of their anti-plagiarism. you should be able to prove they are unreliable though

Sorry for bringing up an older post but don't do this. I have a buddy who's a TA and it took us about a week to figure out multiple key words and sentences that ChatGPT loves to put into people's essays. Multiple people in the class were using it and I found it pretty easy to narrow down what prompts were used to come up with the meat of their word count. Some students were more careful than others, but it gets easy to spot even when it's been paraphrased. Aside from the risk of being caught, it's so pointless. By the time you get good enough at the prompts to come up with a decent thesis you might as well have researched it yourself. Also, you're wasting your time and money in school by doing this and for the inevitable end of being dishonourable discharged from university for the laziest of crimes.
Having said that, I don't believe in laziness. If you're genuinely struggling to write your own papers to the point where you think cheating is a viable option, there's something else going on. Ask for help. (Most) professors don't actively want you to fail and many are willing to help. Look into student resources and get tested for ADHD if you haven't already. Procrastination is a hell of its own, but you're looking at more than just a failing grade for plagiarism here. I suggest you figure things out now before you really mess up your academic record.

It really just depends on the teacher in my experience, but regardless of that you're there to learn skills that will help you with your career. If it's a gen ed that's irrelevant to your career, then go ahead, but don't cheat your way to a degree just to be unable to perform your job.
