It's important to remember that in any relationship, communication and compromise are key. Perhaps you could try sitting down with her and explaining why you enjoy anime and suggest watching an episode together of a series that you think she might enjoy. It could be an opportunity for both of you to share your interests and find common ground.

I think some anime has too much ‘fan service’ which makes it seem inappropriate but there are some that are less lewd.
